Last weekend I watched two movies on Netflix: The Power of the Dog and Old Henry.
Despite being quite different from each other, they were both described as Westerns. I can only assume, therefore, that whatever they have in common must define the Western genre.
So, it boils down to this:

Characters who do not survive until the end.
Pistols.
Oily hair and beards.
People who say things with their eyes.
At least five stinky looking dudes.
Blood.
Secrets.
Bleakness.
Chickens.
