My great-grandad, Ephraim Middleditch, had a favourite snack—which he created thusly:
Grate some cheese onto a plate.
Douse it with vinegar.
Squish them together with a fork.
I’m guessing, but I suspect this would turn a blandish cheddar into something that tasted more mature.
Snazzy cheeses were hard to come by after the war.
